Preparación

  1. Adicionar agua fría en Cheese Cooker, agregar sales y caseína, dejar de 3 a 5 minutos de hidratación a 100 RPM.
  2. Agregar PENTECH™ 8500 en constante agitación a 100 RPM.
  3. Subir temperatura a 57 °C y mantener por 5 minutos en constante agitación (100 RPM).
  4. Adicionar grasa previamente fundida en baño maría.
  5. Subir temperatura a 77°C por 5 minutos con agitación constante (100 RPM).
  6. Agregar saborizantes, ácido láctico y mezclar por 1 minuto.
  7. Activar bomba de vacío a 10 mmHg por 30 segundos.
  8. Descargar y estirar pasta.
  9. Formar hebras hasta que se enfríe la pasta.
  10. Formar bola de queso con hebras.
  11. Refrigerar.
