Preparation

  1. In tank, mix water and Dairyblend Acidified Beverage 120 for 5 minutes to properly hydrate.
  2. Add preservatives and sugar to the stabilizer tank and mix additional 5 minutes.
  3. Add the yogurt slowly while mixing.
  4. Add flavor to the batch.
  5. Mix solution until homogenous and smooth.
  6. Adjust pH to 4.2 with lactic acid.
  7. UHT Process: preheat 160o F, homogenize 2500 psi total (2000/500), final heat 280o F for 3 seconds.
  8. Collect cold under sterile hood into sterile bottles.
