Ingredients: Water, Coconut Milk, Faba Bean Protein, Sugar, Starch

Preparation

Blend dry components together
Incorporate into warm (40°C) water & coconut milk under high shear for 10 min
Let hydrate for 20 min under moderate agitation
Preheat to 60°C
Homogenize (2nd/1st stage) @ 150/50 bar
Heat to 95°C and hold for 6min
Cool to 43°C and inoculate with vegan culture (VEGA™ Premium from Chr. Hansen)
At pH 4.6 stop fermentation, stretch (static smoothing equipment) and fill
Cool down to 4°C
