Preparation

  1. Mix the dry ingredients.
  2. Thaw and mash the strawberries using a kitchen aid with a heating unit. Add to the pre-blended dry ingredients and mix thoroughly.
  3. Heat to 90°C and hold for five to 10 minutes until the starch is fully functionalised.
  4. Cool to 20°C under agitation.
  5. Fill into containers and store refrigerated at 4°C.
