Nutriloid™ Gum Arabic FT90 2.200
SWEETIS®-DR500 Sweetener 1.650
Fresh mint leaves 0.300
Apple flavour 0.200
Caramel colour 0.020
Sodium benzoate 0.017
ENLITEN® 300000 Reb A Stevia Sweetener 0.008

Preparation

  1. Hydrate Nutriloid™ Gum Arabic FT90 by mixing at 300rpm in ambient water.
  2. Pre-dissolve sodium benzoate in water and add into the mix.
  3.  Mix apple juice concentrate, lime juice and mint leaves at 5000rpm for 3 minutes.
  4. Filter the mix in Step #3 using a filter bag. Add the filtered mix into Step #2.
  5. Add SWEETIS®-DR500 sweetener, ENLITEN® 300000 Reb A stevia sweetener, caramel colour and apple flavour.
  6. Top up with water to the final volume.
  7. Pasteurise the juice at 95°C for 1 minute.
  8. Hot fill into bottles (ensure temperature is at least 85°C).
  9. Cool in ice bath.
  10. Store at 25°C.
